Christmasy (lemon) Cupcakes

I was asked to make cupcakes for the Christmas celebration we were going to. After a very failed attempt of making cupcakes that tasted ''christmasy'' I just decided to make lemon ones and they turned out great! (except that I got really stressed when I made the decorations so they weren't as great as I would have wanted them to be, just realized that that med me sound like such a perfectionist!). 


               

How you make them: 

You will need: 
For the cake:
100 grams unsalted butter 
130 grams sugar
3 large eggs 
1 teaspoon vanilla extract 
lemon zest from one lemon and the juice 
200 grams flour 
1.5 teaspoons baking powder 
1/4 teaspoon salt 
60 ml milk

For the frosting: 
120 grams softened and unsalted butter 
1/4 teaspoon salt
1 teaspoon vanilla extract 
230 grams confectioners sugar
2 teastoons milk or light cream
1 teaspoon flour 
lemon zest from one lemon (you can add the juice too if you want to) 

How to make them:
Step1: Preheat your oven to 175 degrees Celsius. 
Step2: Mix the butter and sugar until it becomes an even paste, 
add one egg at the time and keep mixing about 2 minutes between each egg has been added. Add the vanilla extract and the lemon zest.
Step3: Mix he flour, baking powder and salt in a separate bowl and add it (but not all at once). Last but not least add the lemon juice and the milk. 
Step4: Fill the cups to about 2/3 and then just put them in the oven for about 20 minutes. Take them out and let them cool before you add the frosting. 

How to make the frosting:
Step1: Soften the butter in a microwave or just leave it out till it becomes room temperature. 
Step2:Sift the confectioner sugar and add it to the butter then add the vanilla extract, salt, flour, milk/cream , lemon zest. 

(!!) If you want to add the lemon juice you have to be really carefully and just add a tiiiiny bit at a time so it doesn't curdle!

Step3: If you want it to have a certain color just add food coloring.

Last but not least:
Pipe the frosting onto the cupcake! 
If you want to make some kind of decoration I just use marzipan and blend it together with some food coloring.
