Je voudrais!






Five details

I'm just another kid in a candy store - Swedish ''kiss'' lollipops!
Just another really cold day in Lund.. 
Made yet another smoothie today and this is probably one of my favorite smoothies  i've made so far! 
what i used was: Strawberries, raspberries, mango, kiwi, lemon, lime, blood orange and a tiny bit of really 
fine graded dark chocolate with a couple of small pieces of chocolate on top!

Me and my two best friends have decided that we are going to take a trip to New York in October and I'm so excited! I haven't been in New York since 2010 when I was there with my dad visiting my sister and her husband who lived there for a while. So it's about time to go back! So I've started to save up for the trip!

Friends from home

Quick visit from some old classmates! 
For one short weekend mote than half of my high school class has been together and it's been so nice to have them here! It's just like old times! 

Went to the European school of Luxembourg and all the people in the different years are divided into sections of different nationalities so I was in the Swedish section and then we had certain subjects in Swedish like Math, our first language so in our case Swedish, the sciences and philosophy for example. We have been in the same class for 12 years and I've been in it for 10 so we're really good friends so it feels so good to have them here! 

In my year we were 270 people and we are 12 sections in my school so there are a lot of languages which I really loved and really miss here in Sweden! 

Boys will be boys!

Time for Waffles!



Swedsih Waffles - super easy to make! 

What you need : 

2 eggs 
5 dl milk 
4dl flour
a pinch of salt

Waffle iron 

Step 1 : Mix all the ingredients together, I always start mixing the eggs and the milk and then add the flour (not all at once but a bout half a dl at a time) and the salt. 

Step 2 : Heat up your waffle iron and pour some of the batter into the iron and then take your waffle out when it's become golden brown. 

Step 3 : I like to eat my waffles with whipped cream and raspberry jam but you can eat them with nutella, any other type of jam, sugar, and a whole bunch of other stuff!

Salmon with tomato butter

Today I celebrated the "day of love" with one of my best friends Klara and had dinner with her and this is what I made and how! My mother always used to serve this for new years when I was little and that because it's red I thought that it would be perfect for a valentine's day meal.

What you need:

Salmon
1 tablespoon of olive oil
1 tablespoon of vinegar
salt
thyme


150g butter
4 tablespoons of tomato puree
1/2 teaspoon of salt

Step 1. Set your oven to 175 degrees Celcius If the salmon is frozen let it thaw and then put some aluminum foil in a dish that you can put in the oven and then put the salmon on the dish. 


   

Step 2. Mix the vinegar, olive oil, a pinch of salt and a pinch of thyme and pour it over the salmon and let it set for about 20 minutes. 

   

Step 3. For the tomato butter you just mix the butter, the tomato puree and a pinch of salt and spread half of it on top of the salmon. Then put it in the oven for about 20 minutes. 

         

Step 4. Take it out of the oven and serve it with something delicious. I served it with mashed potatoes and a bit of salad and then you can serve the rest of the tomato butter on the side, it's really good!

Tomato Hearts


Step 1. Cut small 'V'-shaped pieces out of paper and glue them on to a toothpick. 


Step 2.  Cut a oval shaped cherry tomato in half but in an angle so that you can turn one of the halves ''upside down'' and make it look like a heart, then put the toothpick that now looks a bit like an arrow thru the two halves so that they stay!! 


So tomorrow you can decorate your meal with one or two of these to make it a bit more romantic and cute.

Dying of Jealousy!

At this time a yeas ago I was in Val Thorens with some of my best friends having the greatest time ever! And right now some of my other friends are there. One of them keeps texting me telling me about the weather and all the fun that they're having and I just want to curl up in a ball and die of jealousy! 

In the highschool it went to it became a thing to go skiing in the beginning of February the same year that you graduate. Last year I thing we were between 30-40 people who went to Val Thorens and I just really want to do it again! 

I haven't been able to go skiing this year so next year I'm making sure that I'll get to go with a bunch of friends!

The test

Yesterday I had my first "big test" since I got to university. Now that I'm studying psychology we have a another kind of tests than what we did when I was studying ethnology. When I was studying ethnology we just sent in an essay once in a while but now we all have to go and write our tests together in a big hall and sit there for a maximum of four hours. 

I realized about a week ago that I wouldn't be able to get the 50% needed to pass the test so I didn't really bother to study either. I just went there, sat down, looked though the questions, and started drawing what's on the picture below. 
The reason why I didn't really bother to study is that I have a chance to do a test on the same subject again in a month. 

I don't know what it's like in other universities around the world but here we can write our name on the paper and then just give it in and leave after a certain amount of time has passed, and then do the test another time, and you can do it for as many times as it takes for you to pass (or get a higher mark) within a year.

This is one of my favorite rings, don't ask me what it's doing on my door handle.. I have been looking for this ring for about two weeks now and suddenly it shows up on my door handle..? so weird!
Obviously someone put it there but I can't for the world figure out who.. 
I can easily say that this made my day.

Caesar Salad

Mmmm.. My favorite! 


What you need: 

Salad
Chiabatta bread 
1 Chicken breast 
Olive oil

For the dressing : 

1 garlic clove 
Parmesan
1 tablespoon of white vine vinegar 
5 tablespoons of mayonnaise 

How to make it: 

Step 1: Cut the salad and put it on a plate, fry the chicken and while you do fry the chicken you can make the dressing to save time. 

Step 2: Mix the ingredients for the dressing together. I usually use about half a hand full of grated Parmesan for the dressing but make a bit more so that I can sprinkle some on top when its all done. (I love to add about a tablespoon of lemon juice into the mix, but that's just me) 

( If I want to make the salad a bit healthier (and that happens very often) I usually use something we call gräddfil here in Sweden instead of the mayonnaise, it's basically creme fraiche mixed with a tiny bit of water so it's a lot more liquid than the creme fraiche. It doesn't turn out quite as tasty but it's still delicious. )

Step 3: Pour the dressing on top of the salad, cut the chicken into pieces and put it on top. Now the only thing you have to do is to cut the bread into small cubes and fry them in a bit of olive oil so that they become crunchy and when you have done that just put them on top of the rest. 

I love to cut up some cherry tomatoes and put them on top, simply delicious. 

The last thing you can to do is to sprinkle some Parmesan on top and then you're done.
