Chocolate and Hazelnut Biscotti


Takes about 2 hours to make but only 20 minutes to prepare.

Biscotti is a type of biscuit that has been baked twice so that the moisture is taken away and your left with a dry biscuit that you can keep for a long time! They are perfect on the side of a cup of coffee, tee or just on it's own as a little snack.

What you need:
120g chocolate
2.5dl tightly packed light brown sugar
4dl flour
5 tablespoons cocoa powder
1 tablespoon expresso powder
1 teaspoon baking powder
3 large eggs
1/4 teaspoon salt
200g hazelnuts

How you make them:

Step1: Start by preheating your oven to 150 degrees Celsius.

Step2: In a food processor chop the chocolate till it basically becomes a powder and then add in the brown sugar and mix for another minute or two.

Step3: I a separate bowl mix the flour, cocoa powder, espresso powder and baking powder.

Step4: In a third bowl whisk the eggs together with the salt for about a minute, just so that they get well combined. Add the chocolate and sugar mixture and combine, add your dry ingredients, last add the hazelnuts (make sure that they are evenly distributed in the dough).



Step5: Spread some flour out on a flat surface so that the dough (that is really sticky) doesn't stick. Roll the dough together and then divide it into two parts. Then form the two pieces so that they are about 5x25 cm and then put them pan a piece of baking paper and flatten them a bit so that they are about 1.5cm thick.



Step6: Bake them in your oven for about 35-40 minutes. Then take them out and let them cool. with a cooking brush brush away the flour that will be on top and underneath of the ''loaf''. 

Step7: Cut them into 1.5cm thick pieces and place the pieces back on your baking paper.


Step8: Bake them for 20 minutes and then turn them over and bake them for another 20, then take them out, let them cool and enjoy!
