Mud Cupcakes


This is my version of a mud cupcake. It's actually just a chocolate and hazelnut cupcake but I decided to name it ''Mud cupcake'' because - let's face it - that's what they look like! 
I have made these a couple of times but just these ones I made for my nephews 9th birthday party that we celebrated today (that's why there are skulls on the cupcake liners if you hadn't noticed). 
They take about an hour to make and are really delicious! 

What you need for the cake: 
4 tablespoons cocoa
1dl hot water
3dl flour
2 teaspoons baking powder
1 teaspoon salt
100g butter
1.5dl sugar
2 eggs 
2dl milk
200g dark chocolate. 
1dl finely chopped up hazelnuts 

And then for the topping:
100g soft butter
300g confectioners sugar
3 tablespoons cocoa
1dl finely chopped up hazelnuts
50g melted dark chocolate


How you make the cake: 
Step1: Preheat your oven to 175 degrees Celsius.
Step2: mix the hot water and the cocoa and then let it cool down. 
Step3: In a separate bowl mix the hazelnuts and your dry ingredients (flour, baking powder and salt).
Step4: In yet another big bowl mix the sugar and butter together till it's become a smooth mixture, then add one egg at a time.
Step5: combine all the three mixtures into one!
Step6: Bring the milk to a boil in a pan and then remove it from the heat and add the chocolate and let it melt in the milk. When the chocolate has melted add it to the rest. 
Step7: Put your cupcake liners on a baking sheet and fill two thirds of them. Bake them for about 20 minutes and then let them cool. 

How you make the the topping:
Just mix the ingredients together and then either pipe it onto the cupcakes or just use a spoon.

Apple snack


This is something you can eat for breakfast or just as a snack, you could even serve it as a simple dessert if you ask me! 

You only need two things :
apples 
Greek yoghurt

Dice the apples and then serve them on with some Greek yoghurt, it is sweet but still quite healthy and most importantly - delicious!

I want to be a part of it New York, New York!

Start spreading the news, I'm leaving... In January... I want to be a part of it New York, New York!  I finally booked my tickets for a trip to New York with one of my best friends and I can't wait! I am so excited! I haven't been in New York since 2010 so it's about time to visit the big city again! 
So I'm going to Los Angeles in October, home to Luxembourg in November and then again in December and then to New York in January, all in all I am one happy camper at the moment!

White chocolate and Lime mousse

This dessert is really, really easy to make! it takes about ten minutes to make but then it has to be kept in the fridge for three hours. 

What you need:
150g white chocolate
2.5dl creme fraiche
1 lime  
250g raspberries

How you make it: 
Step1: chop the chocolate into smaller pieces and pour them into a heatproof bowl. In a pot (that is a bit bigger then the bowl) bring water to a boil and then put the heatproof bowl in the water and let the chocolate melt.
Step2: take the bowl out of the pot and add the creme fraiche and combine it well.
Step3:  grate the peel of of the lime and add it to the mix.
Step4: either just put the bowl in the fridge and then serve it with a spoon or do it the fancier way and pour the mixture into a couple of glasses or dessert bowls and then put them in the fridge for three hours.
Step5: if your raspberries are frozen just microwave them for three minutes and then cook them on medium heat while mashing them together until it becomes a sauce. Then let it cool
Step6: pour a thin layer of raspberry sauce on top of the mousse and then serve it.

Five details

Having a little fun with my gummy bears. 

I am so happy that things have almost gone back to normal, I still have to get used to the new school schedule and all of that but I am so happy that everyone is home from the summer holidays now and that there are people in my dorm all the time. This is why I love living in a dorm, if you want to be social you only have to go into the kitchen and there will be someone there that you can talk to for a bit, then if you want to be alone you only have to go into your room, love it! And another plus is that there is always someone who wants to go out when you feel like it! 

Really sad that I don't have a place here in Lund where I can buy beagles, when I went to London I brought two packs of them home with me, and now they're all gone... buuh.. :( 


Being a really bad Sister / daughter / granddaughter at the moment, really have to post these soon, I never write cards when I travel and now I thought ''Yes! This time I'm going to do it, and they're all going to so be so surprised!'' but that didn't happen..

Brownies


What you need for the cake:
5 eggs 
2 dl brown sugar
2 dl sugar
200g butter
1 dl cocoa
2 tablespoons honey
2 dl flour

and for the topping:
200g dark chocolate
75g white chocolate
150g hazelnuts 

How you make it:
Step1: preheat your oven to 150 degrees Celsius 
Step2: whist your eggs together until fluffy 
Step3: add the brown and regular sugar. Mix mix mix. 
Step4: melt the butter and let it cool for a few minutes and mix it in with the rest. 
Step5: add the rest of the ingredients one by one. 
Step6: put baking paper in a pan or dish and pour the batter into the dish. 
Step7: bake for about 45 minutes, you should be able to stick a toothpick in the cake and have it come out cream. 
Step8: take it out and let it cool.

Topping:

Step1: melt dark chocolate and pour it on top of the cake. 
Step2: spread chopped hazelnuts over the chocolate so that they stick to it. 
Step3: sprinkle white chocolate over the cake or put it in a ziplock bag and cut a tiny hole in one of the corners and then squeeze it thru so that you get thin lines of white chocolate on top. 

Now you only have to cut the entire thing into portion sized pieces and voila! You're done!

Sorry about the absence!


These past few weeks have been a lot to handle! I've had stuff to do all the time and it's hard to catch a break. As some of you might know I went to London last week to visit a friend. After I got back from that I had to start preparing for the new term to start. There have been dinners, parties, meetings and lectures and it will continue like this for about a month!

On Monday I started studying a new subject at a new university, I still live in Lund but now I've started going back and forth to Malmö because I now study at Malmö högskola. Now I study real estate and I am so happy that I've started studying something that I'm really interested in!
I've always wanted to work with houses for some reason, thought about studying architecture, interior design and a bunch of other stuff but real estate sounded the best so I'm finally starting with it!

Now I just have to learn how to manage my time right, with school, working at my nation and blogging and on top of that have a social life. 
It might take a little while but bear with me!
