What you need:
150g white chocolate
2.5dl creme fraiche
How you make it:
Step1: chop the chocolate into smaller pieces and pour them into a heatproof bowl. In a pot (that is a bit bigger then the bowl) bring water to a boil and then put the heatproof bowl in the water and let the chocolate melt.
Step2: take the bowl out of the pot and add the creme fraiche and combine it well.
Step3: grate the peel of of the lime and add it to the mix.
Step4: either just put the bowl in the fridge and then serve it with a spoon or do it the fancier way and pour the mixture into a couple of glasses or dessert bowls and then put them in the fridge for three hours.
Step5: if your raspberries are frozen just microwave them for three minutes and then cook them on medium heat while mashing them together until it becomes a sauce. Then let it cool
Step6: pour a thin layer of raspberry sauce on top of the mousse and then serve it.
