Elderflower panna cotta


This dessert isn't really that sweet, I mean, not compared to all the other things I make.
What it is is a elderflower panna cotta with a fruity jam/jelly in the bottom that has been combined with the panna cotta! 
If you want to be on the safe side let them set in the refrigerator over night. 
It takes a long time to make if you look at the time between start and serve but the actual time that you have to spend on making them is about an hour

What you need:
For the panna cotta:
4dl cream
10 elder flower branches
0,5dl sugar
The zest from half a lemon
4 teaspoons gelatin powder
1dl yoghurt

For the jam:
10 strawberries (smaller ones)
Half a pomegranate
Two passion fruits
Lemon juice from half a lemon
Two tablespoons gelatin powder

How you make them:
Start with the panna cotta,
Srep1: Pour 3dl of the cream into a bow and add the elder flowers and let it set in the fridge for about 3 hours so that the flavor of the elderflower really comes thru then take the elderflower branches out.
Step2: Pour the elderflower cream into a sauce pan with the rest of the cream, sugar and lemon zest. Bring it to a boil.
Step3: Add the gelatin powder and let it cook for another minute.
Step4: Take it of the heat and add the yoghurt.
Step5: pour it into separate glasses and put them in the fridge until you need them again.

Continue with the jam. 
Step6In a bowl pure the strawberries, pomegranate seeds and passion fruit together.
Step7Pour it all into a sauce pan and add the lemon juice and bring it to a boil. 
Step8Add the gelatin powder and let it cook for another minute.
Step9Take it of the heat and run it thru a sieve to get rid of all the bits and pieces that are in it.

Step10Take the glasses with the panna cotta out of the fridge and just pour the jam into the glasses. 
The jam will be heavier then the panna cotta so it will sink to the bottom.
Step11The last thing you have to do is to just stir it around with a fork and put it back in the fridge for a few hours. If you want to be on the safe side let them sit in the refrigerator over night. 

When I served it I just topped it with some fresh strawberries, pomegranate seeds and passion fruit.
